Banana Peanut Butter Protein Bars

Here's an easy recipe for protein bars made from faba bean protein and peanut butter. They're vegan and have a chocolate topping.

Ingredients

For the base:

  • 3/4c smooth peanut butter
  • 1/2c honey
  • 1T vanilla
  • 1T coconut oil
  • 1/4c ground flaxseed
  • 1/2c NZProtein banana Faba Bean protein

For the topping:

  • 1/2c dark chocolate chips
  • 1T coconut oil

Directions

  1. Mix all the wet ingredients together until smooth.
  2. Add in dry ingredients and mix well. It should be a cookie dough consistency.
  3. Press the mixture into a lined baking tray and set aside.
  4. In a small bowl melt the chocolate chips and coconut oil in the microwave, or over low heat in a saucepan and pour over the slice.
  5. Set in the fridge for 1+ hour to set the chocolate. Slice and enjoy!
