NZ Protein Full Of Goodness Protein Bar

Ingredients
1 cup NZProtein Pancake Mix
1 tsp NZProtein Matcha
1 tsp NZProtein Super Blend
¼ cup of a finely chopped dried fruit combination… i.e. Goji berries, blueberries, strawberries, cranberries
1 cup of a crushed nut combination… i.e. walnuts, hazelnuts, almonds
2 Tbsp desiccated coconut
½ cup almond meal
1 Tbsp natural peanut butter
1 Tbsp Maple Syrup
50 – 75 mls melted or room temperature coconut oil
Directions
Mix all dry ingredients thoroughly.
Mix the wet ingredients into another bowl and gently melt in the microwave for 20 – 30 seconds.
Mix the wet and dry ingredients together thoroughly.
Line a tray or square cake tin with baking paper.
Put the mixture into the tin and press down firmly, and place in the fridge for 1 hour to set.
Chop into pieces when set and store in an airtight container in the fridge.
Alternate Recipe - NO sugar version

Ingredients
1 cup NZProtein Pancake Mix
2 Tblsp Cacao or cocoa powder
¼ cup coconut
50 mls coconut oil (melted or room temp)
Directions
Mix all dry ingredients thoroughly.
Add the coconut oil and mix again until completely combined.
Line a tray with baking paper and press the mixture into the tray as thick as you require in a rectangular shape. An ice cream container is good for this.
Place in the fridge to set for approx 1 hour. Cut and store in an airtight container in the fridge.
Variations
Additional sweetness - measure 1 tablespoon of maple syrup into a container and top up with coconut oil to make the 50 mls liquid.
Nuts or dried fruit version - ensure the fruit and nuts are finely chopped and add to the mixture prior to the oil. Keep the pieces small or the bar will break apart and crumble.
